Thanks for the question. No, as it stands, the mesh is fixed once you're done creating it.

However, you have a lot of options to make an animatable version. For example, you could create a grid with no extrusion, create a vertex group, append some vertex weight modifiers and a solidify modifier. Then you could animate any of the keyframe-able inputs on the modifiers.

You could probably also work with shape keys. Or you could create each hexagon cell as a separate object then animate the transform's scale.
